This easy and delicious Chickpeas with vegetables recipe is a reliable source of protein and other important nutrients. It can be made into a side dish or a complete meal entirely on its own since it is nutrients dense and contains a burst of flavor like no other recipes I’ve tried. The dish is easy to prepare, especially if you are a beginner cook looking to prepare a healthy and delicious meal for yourself. Not only that, but you can also use it to entice your partner or to contribute to an indoor family dinner. I enjoy mine with rib-eye steak, but you can enjoy yours with any other choice of meat, a vegan meat alternative or simply paired with rice.
Recipe
Makes enough for 2 big meals or 3-4 smaller meals
Requirements:
- 1 can chickpea
- 1 large red bell pepper (sliced thinly, lengthwise)
- 1 small red/ purple onion (sliced thinly, lengthwise)
- 1 small cucumber (seed/seedless)
- 8 cherry tomatoes (sliced in halves)
- 1 stem of baby Bok Choy (washed and chopped in 2)
- ¼ cup red wine vinegar
- 1 tablespoon white sugar
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 medium sauté pan
Directions for preparation:
- Place a saucepan to heat up on high heat then when the pan is hot, add in the olive oil
- Once the oil begins to smoke, add in the sliced bell pepper and onions
- Stir for about 30 seconds and add in salt and pepper to taste
- Continue stirring for another 30 seconds
- Sprinkle the sugar evenly over the peppers and onion. Let it cook for another 15 seconds. This will help the pepper to tenderize.
- Add in the red wine vinegar and mix. Let it cook until vinegar is almost absorbed. Keep Stirring often.
- Lower the heat to medium and add in the Bok choy. Cover and let it cook until the bok choy are slightly wilted. This should take about 2-3 mins
- Drain and wash the chickpeas and then add it to the vegetables. Cover and let it cook until most of the liquid has been absorbed. At this point, you can add more salt and pepper as needed.
- Turn the heat down to simmer then add in cherry tomatoes and cucumber.
- Mix everything together, cover and let simmer for 5 mins.
- Finally, serve as desired.
