A Perfect Crispy Salmon Dinner Recipe may sound intimidating but it is actually an easy dish to prepare.

Salmon in general is a tender, healthy and absolutely delicious fish. You can effortlessly find a great cut at your local supermarket and prepare it via smoking, poaching, broiling, baking, grilling, steaming, etc.

However, for now, I am sharing with you; how to prepare the perfect crispy salmon, using the pan-fried method, which can be paired with one or more side dishes of your choice.

Tools you’ll need:

  • Large Sauté pan or skillet
  • Cutting board
  • Large knife
  • Large, Flat spatula

Ingredients you’ll need:

  • Salmon
  • Salt and black pepper to taste
  • 1-2 stalks of Rosemary
  • Butter
  • 2 Whole garlic cloves per piece of salmon
  • Olive oil
  • Fresh thin lemon slices for garnishing

How to prepare the salmon for cooking

  1. Remove any scale that is on the skin of the fish. Be gentle in order to avoid damaging the fish in any way.

Tip: Do this before cutting the fish into desired size/pieces since it is easier to remove scales from larger pieces.

 

  1. Wash the salmon in room temperature water to remove dust, dirt and loose scales.
  2. Using a paper towel, pat the fish dry to remove excess water to reduce oil splatters when cooking and help with browning.
  3. Use a large sharp knife to cut the fish into the desired size for cooking
  4. Lay out each piece, skin side up, on a flat surface such as your cutting board.
  5. Place one hand on the top and try to roll both length (at the same time) of the salmon slightly under. This should cause the center of the fish to somewhat pop upwards.
  6. Now, using the knife, place small cuts, parallel to the width, on the surface of the skin. Each cut should be approximately a ¼ inch deep and ¾ inch apart. Do not cut all the way through as this is simply to prevent the fish from curving upwards in the pan and cooking unevenly. Also, it is important that your knife is sharp enough to place quick easy cuts into the fish. A dull knife will destroy the meat.
  7. Season the fish generously with salt and pepper on both sides.

How to cook the Salmon:

  1.  Place a large sauté pan or skillet to heat up on medium-high heat.
  2. Once the pan is hot, add in enough olive oil to thinly coat the bottom of the pan.
  3. As soon as the oil begins to smoke, gently lay the salmon into the pan; skin side down, and away from you. Depending on the size of the pan and the salmon pieces, you may be able to add in more than 1 pieces to cook at once. Do not crowd the pan.
  4. Add in 1-2 stalks of fresh rosemary and a few crushed garlic cloves.
  5. You can tell where the salmon is cooked due to the obvious color change. Look for the change on the side. Once it is about a ¾ way towards the top, use a large, flat spatula to flip the salmon. Be careful not to lift the skin off the meat. The salmon should only be flipped once.
  6. Add a few tablespoons of butter into the pan. Then, baste the salmon in the melted butter every 30-40 seconds throughout the cooking period to keep it from drying out.
  7. In about 3-4 minutes, remove the salmon from the pan and serve skin side up and paired with any side dishes of your choice.
